Carrot and sweet potato soup
Saturday 4 February 2012
I love making soup at the weekend when its cold. Its so homely and heartwarming, all I need now is a fire and an episode of heartbeat and I'll be in ecstasy!
Ingredients
2 large sweet potatoes
6 carrots
1 onion
2 teaspoons paprika
1 teaspoon curry powder
2 generous tablespoons of Creme fraiche
a squeeze of fresh orange juice
1 1/2 litres of stock (I used chicken)
Fry the chopped onion in some butter on a low heat for a few minutes, then add the other vegetables- peeled and chopped- stir for around 5 minutes. Add the stock to the mix and season. Add the paprika, curry powder and orange juice to your taste and season well with salt and pepper. Leave to simmer on a low heat for 20 minutes then puree the mixture with a hand whisk, if the soup seems too gloopy add some more stock or water. Taste and season again. Add the creme fraiche, blending it into the soup. Serve with a swirl of creme fraiche and a sprinkling of paprika- to make it look fancy. lovely!
